If you didn’t know, Mimi is all about the quick meal. 30 minutes or less the better. I found a recipe for sweet and spicy chicken tenders and decided to give it a whirl with El Yucateco hot sauce. There are a number of El Yucateco varieties available, I decided to go with the Chile Habenero that I picked up from Walmart.
Chopped my chicken breasts into strips. You could totally cut them into cubes as well and make a stir fry from this recipe.
While my oil was warming in the pan. I mixed together honey, brown sugar, ginger, garlic and El Yucateco Hot sauce to make the sauce.
I seasoned the chicken with a little salt and pepper before putting in the grease. I let each side brown a bit before adding in the sauce.
I let simmer for about 20 minutes and was ready to eat. Was really good, the hot sauce added a kick and the honey was enough to balance it out. For a more crunchy texture dredge the chicken in flour before putting in the grease.
In celebration of football season, I put these together with some fries and ranch dressing for my husband. He was good!

1 tablespoon brown sugar
2 tablespoons honey
1/4 cup soy sauce
2 teaspoons chopped fresh ginger root
2 teaspoons chopped garlic

2 tablespoons hot sauce
salt and pepper to taste
4 skinless, boneless chicken breast
halves – cut into 1/2 inch strips
1 tablespoon vegetable oil

1. | Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl. |
2. | Lightly salt and pepper the chicken strips. |
3. | Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes. |
