I can’t believe it’s almost Christmas. We won’t be traveling as a family for the holiday, but I may be scooting out to New York for New Years weekend to kick it with the homies. The few times that we have traveled during Christmas, I feel like my nerves were a complete wreck by the time we got where we were going.

You know, we have to get the kids stuff together, and our stuff together, and clean the house, and wrap presents,and fit said presents in the car. It’s so much to keep up with.

When traveling during the holidays, it is really hard to predict what will happen with delays, lost luggage etc. so as they say, stay ready so you don’t have to get ready. Whenever I travel, I always keep my essentials with me in a carry-on. I  include a change of clothing, something to read, my phone, laptop, chargers and any personal items I may need.

Elf on the Shelf Finale

Bella and Charlotte have been a Christmas tradition in our home since 2013. Just when I thought I would move on to another tradition and let everything out of the bag, today I was excitedly informed that Addison had gotten word that Bella and Charlotte are busy at the North Pole packing their suitcases to come see us.

I think the elves moved a whole 5 times last year. Now I’m left holding my plan in shattered pieces. I am committing to making this the best year ever for her memories. There will not be a next year, Bella and Charlotte will turn into regular Christmas decor in 2018 and find themselves placed amongst the nutcrackers and garland like everything else.

White Chocolate Chip Banana Bread Cookies

I’ve been sick. Like under the bed sick, open one eye in the morning to assess whether I feel like myself before pulling the cover back over my head 3 days in a row type of sick.

SICK.

Yesterday, I managed to salvage a part of my normal existence and baked some cookies with the babies. Poor things have been trapped in the house since Monday being my nurses. I grocery shopped this weekend and purchased some bananas that needed to be used so I thought I’d try banana bread cookies for my contribution to the tasty #HousefulofCookies blog hop happening over at Houseful of Nicholes.

The cookies surprisingly came out very well. The consistency was very much that of banana bread but in cookie form.

I was feeling adventurous so tossed in a cup of white chocolate morsels that I had on hand.

White Chocolate Chip Banana Bread Cookies
Prep time:

Total time:
Serves: 3 dozen cookies
Ingredients
  • 3 Bananas
  • 1 Cup of Granulated Sugar
  • 1 Stick Unsalted Butter
  • 2 Eggs
  • I Tsp Vanilla Extract
  • 2 Cups All Purpose Flour
  • 1 Tsp Baking Soda
  • 1/4 Tsp salt
  • 1 Cup White Chocolate Morsels
Instructions
  1. Preheat oven to 350
  2. Mix butter and sugar together. Once mixed well add in vanilla, bananas and eggs
  3. Slowly add in baking soda, flour and salt. Once all mixed together toss in chocolate chips
  4. Place teaspoons of mixture onto a parchment paper lined baking sheet about 2 in apart
  5. Bake for 10 minutes.
