You have stalked Pinterest, carefully meal planned for the week and are actually excited to try out your new finds when……you’ve been out all day, the traffic was awful, the kid got sick, you have a headache, Murphy’s law showed up and showed out and all of your planning is gone out of the window.

What do you eat? Like seriously.

I know we all have that one easy concoction of a meal that is the go to. Well, share yours. I’m tired of ours.

I’m too ashamed to tell you what one of them is but the other is usually chicken stir fry. I buy the vegetables already cut up in the bag. I throw it in the pot with some pre cut chicken strips, pour a bottle of teriyaki sauce over it while the rice cooker gets the rice ready and voila!

Welp, I think we can only eat so much chicken stir fry. What is your go to easy meal when you just don’t feel like cooking.

Biiiiiiiiiis Kiiiiiiiiits

I made biscuits. From scratch. Me, all by myself…okay with the help of a Paula Deen recipe but my execution was perfect for once.

Here’s the story.

Once upon a time I went to Publix. Although I knew better, I went without a grocery list and as usual I forgot many things to include bread, Ritz crackers and biscuits. Instead of rushing out in the dreary and rainy weather I thought for sure that I might have all of the ingredients on hand to make homemade biscuits after my attempt at making those nasty cupcakes over Christmas. Well call me Suzie Homemaker I had all of the ingredients..barely, but I had them.

I started off by cubing the butter..at least this is my take on it.

Then it said something about cutting the butter into the flour mixture. Cutting? *blank stare* I translated that to mean mash, so that’s what I did.

Since I never have proper utensils I settled on using my cutting board to roll out the dough. “Roll out” to be taken lightly seeing I have no rolling pin and instead flattened it with my hand.

Next I had to cut out the biscuits with a biscuit cutter. Please no shade or laughter at my biscuit cutter.

The recipe stated to butter the pan. Instead I used Baker’s Joy

My oven has been known to sabotage me and thwart my efforts at being great in the kitchen so while the recipe called for 12 minutes I started off at 8 min and they were ready in 10.

Yahhh!!! I did it. If you try this recipe, note that it says it yields 3 dozen and I only got a dozen because I wanted them thick. Ow!!!

Inspiration Needed

Next weekend the Mr. and I are headed to the North Ga. mountains for our annual couples getaway. My MIL in law is coming to town to watch the children so we can avoid the mishap from last year found—-> here

Well now that I am trying to be more “domesticated” I have decided to try to whip up something special for our snacks and desserts during the weekend. Not having a clue where to start I am currently looking at Pinterest for inspiration. Here is what I’ve come up with. I’ll make sure to get pics of everything. Hopefully they won’t turn out like the cookies found—-> here.

Lil Mama Lil Man Recipes Weekend

Motivation Monday

Happy Monday. Hope your weekend was well.

Friday, I got a last minute call from Trina asking if I wanted to head down to the Blogalicious event being held downtown. Although it was last minute I threw on some clothes and met her down there. Glad I did. Got a wealth of information regarding how to brand and monetize a blog..Armed with this knowledge, I have decided to brand my blog. Details to come. After networking, having a mojito, and catching up with other area bloggers I headed home to get ready for early morning kick off time.

Lil Man’s first game was Saturday morning. Pleased to announce they won. Gooooo Wolfpack. It was super hot out there, I am counting down the days until cooler weather.

Mr. and Lil Mama

The Mr. coaches his own pee wee team so after the game he took Lil Man with him to his team’s game and Lil Mama and I headed to do some shopping. I needed to get my stepdaughter some school clothes and Lil Man some jeans. Last week he may or may not have gone to school “flooding”. Can’t have that. Was happy that Old Navy was having a sale for $10 kids jeans. I love their jeans because they wash well and last pretty long. I bought a ton of jeans and a few other things and headed to Goodwill. I have taken up thrifting lately and boy some of the finds I have found….I’ll do a post later in the week with some of my finds. After a long day of shopping we headed home.

Sunday was chill day. I slept in. The Mr. took the morning shift. Then I woke up and took over so he could nap. Restful day.

This week I have a few goals that I need to accomplish.

Miles: This week in training for the half marathon, I need to run a total of 14 mi.

Meals: I get texts daily from Martha Stewart Living with daily meal ideas. One day last week one for Pineapple Stuffed Jerk Chicken came through. I am going to try this one day this week. OMG, sounds so good. If it turns out well, I’ll blog about it. You know your girl is kitchen challenged!

Piano: I have been slacking on practicing with Lil Man like I should. He needs to practice every day this week…*sigh*
