I Just Felt Like Cookin’

Today was an extremely long day. I had a Dr.’s appointment, and had to turn around and do grocery shopping. Ironically when I got home instead of throwing together something quick and simple I decided to cook. Yes, you read me…I said cook. So for those of you who may be new to the blog, in the past I have been a complete and total cooking #fail. We just don’t go together, our relationship mirrors oil and water, I just don’t like it.

Oddly enough since I have been blogging and come across many different recipes on a daily basis my interest has been peaked, I kind of want to see what all the fuss is about. Quietly..shhhh don’t tell anyone, I think I am beginning to like it *swoon*. Not to mention my blood pressure is through the roof and the Dr. is running tests to see what is going on so eating out is going to be cut down to a minimum until I can get my pressure under control. Tonight we had baked barbecue chicken, homemade macaroni and cheese, baked beans and corn bread muffins. I made sure to leave out the salt although I did use a bit of Kosher salt, from my understanding that is a little bit better. In the coming weeks, I will be on the hunt for low salt, yummy recipes to cook.

Wish me luck on my new hobby and getting this blood pressure under control!!

Nana Puddin’

Tuesday night after a few mishaps and whateva’s, I managed to pull off baked honey barbecue wings, vanilla rice and a homemade banana pudding *patting myself on the back*!!
As the saying goes, things do get a little better with practice. I hardly call three days of completing recipes a whole lot of practice but I see an improvement from day 1. I managed to read and follow all of the instructions except when I put a 1/2 cup of flour in the banana pudding when the recipe called for a 1/3 cup..again READING IS FUNDAMENTAL. Luckily I realized this before I emptied in the egg yolks that took me 5 minutes to separate from the whites. I dumped out the flour and sugar mixture and started over again. With some helpful advice from one of my besties I managed to whip up the egg whites into meringue and get the pudding in the oven. It wasn’t the prettiest thing but it sure tasted yummy!!
I’m trying to get the basics down…we’ll work on the presentation later!!!
I would like to think Mommy is smiling down from heaven at the thought of me cooking!!

Hey Good Lookin’….Whatcha Got Cookin’

Umm yeah…about that. To be completely and totally honest with you, cooking is NOT my thing. I have never been a fan of the kitchen, grocery shopping, washing dishes or anything remotely involved with being in the kitchen other than grabbing a cookie or something to drink. I don’t particularly like food in that manner, if I didn’t need to eat to survive or make milk for my baby I probably wouldn’t. However, eating is a necessity not only for me but for the Mr. and my babies so I do what I can and stick to the basics, and quite frankly I am getting real tired of the basics.

Ironically my mother was an awesome cook. My friends would look forward to coming over after school or before football games on Friday nights to get something yummy to eat, and she never disappointed. Chili, spaghetti, fried chicken there was always something different and I never appreciated it until she passed away. Lucky for us, along with an awesome legacy she also left notebooks full of recipes that she collected while she was here.

I have been thinking about her alot lately and in her honor I have decided to put her hardwork to use by trying at least one recipe a week (heaven help me). To kick off my efforts next week is officially named “New Eats Week”. All of my recipes for next week have to be selected by Friday, in time for my weekly trip to the grocery store. I am sure I will need to get spices and a few new condiments, two things which have deterred me in the past but not anymore. I am putting on my apron and taking a go at it. Don’t worry you will get all of the commentary along with pictures next week!
