New Eats Week

Although I haven’t felt like cooking, I have stayed true to my post from last week and I have tried out two new recipes so far this week. Sunday night we enjoyed lemon garlic shrimp fettucine, and last night I followed a recipe for salmon cakes that I paired with grits and eggs. Yes, these are fairly simple dishes to whip up, but with my failure to properly follow cooking directions I figured I should probably start off easy if I wanted to stay the course of this challenge. As simple as these dishes are please believe I found a way to screw them up in some way or another.

Sunday: The prep time listed was 10 minutes, it took me 30. The major lesson I learned…READING IS FUNDAMENTAL. I added too much cornstarch (confused tsp with tbs) and the sauce was way too thick so I had to start over. Second time around I realized that I bought the big carton of chicken stock when it only asked for a can. Well how am I supposed to know how much 14.5 oz is…genius, I’ll measure it with the baby’s bottle..gotta be quick on your feet! So I dodge that mishap and the dish actually comes out okay, just a little bland I give it a B-.

Monday: I actually managed to complete this one in record time. I have prepared salmon cakes before, so I had an idea of how to do it, however this recipe called for chopped bell pepper, onion and potato. Outside of the time it took to do the chopping the execution went well. I had to add a little water to the grits, I either cooked them too fast or didn’t have enough water in them, but I fixed that, and dinner turned out an A+. The Mr. gave props on this one.
Tomorrow, I am going to attempt a banana pudding from scratch,..separated egg whites,etc.. I’ll be sure to take photos, this one should be good!!

No Use in Crying Over Spilled Milk

Saturday evening, I got the opportunity to leave the burbs and head to the city for a much needed girls night out. I joined one of my good friends for dinner, and the evening was going better than planned, that is until the waitress asked would we like a beverage from the bar. Before she could get the question out good, I blurted I’ll have a chocolate martini. I’m not a drinker, but certainly a martini snob, and having been pregnant and currently nursing it has been almost a year since I’ve had one. Yum…it was a just right mix, not too strong and extra chocolatey, exactly how I like them. It surely didn’t disappoint, until I got home.
So I knew when I drank it I would have to pump and pour out the milk, sounds easy right..WRONG!! As I poured that milk down the drain, I think a tear went with it. Anyone who has ever pumped and knocked the bottle over feels my pain. I guess I should’ve thought about the consequences before I enjoyed that decadent vodka and chocolate treat..oh well, I guess I have learned my lesson, and we’ll just say that $9.50 was an investment into my sanity for the upcoming week!!

Mimi’s Must Haves and Maybes for Fall

Foliage, cabin getaways, crisp nights, pumpkin patch hayrides, early morning pee wee football games, fly boots, fabulous sweaters, banging coats…ahh yes, although squinting I can see Fall on the horizon and I am excited! My favorite season of the year is upon us and I only need half of a reason to get my mind wrapped around the things that I must have and the ones I have to cup my hands to the window and daydream about. The Mr. took the babies out for awhile last night, and off I went into cyberland plotting on my next purchases..hmmmmm…and then they came home!!

Hey Good Lookin’….Whatcha Got Cookin’

Umm yeah…about that. To be completely and totally honest with you, cooking is NOT my thing. I have never been a fan of the kitchen, grocery shopping, washing dishes or anything remotely involved with being in the kitchen other than grabbing a cookie or something to drink. I don’t particularly like food in that manner, if I didn’t need to eat to survive or make milk for my baby I probably wouldn’t. However, eating is a necessity not only for me but for the Mr. and my babies so I do what I can and stick to the basics, and quite frankly I am getting real tired of the basics.

Ironically my mother was an awesome cook. My friends would look forward to coming over after school or before football games on Friday nights to get something yummy to eat, and she never disappointed. Chili, spaghetti, fried chicken there was always something different and I never appreciated it until she passed away. Lucky for us, along with an awesome legacy she also left notebooks full of recipes that she collected while she was here.

I have been thinking about her alot lately and in her honor I have decided to put her hardwork to use by trying at least one recipe a week (heaven help me). To kick off my efforts next week is officially named “New Eats Week”. All of my recipes for next week have to be selected by Friday, in time for my weekly trip to the grocery store. I am sure I will need to get spices and a few new condiments, two things which have deterred me in the past but not anymore. I am putting on my apron and taking a go at it. Don’t worry you will get all of the commentary along with pictures next week!
