Instant Pot Beef Recipes Pepper Steak

If you watch my Instagram stories you already know I’m smitten with my Instant Pot. What other pot is so forgiving that it  will convert your straight out of the freezer dinner meat into a tender tasty meal in less than 30 minutes. Today I’m going to treat you to one of my favorite instant pot beef recipes… Pepper Steak.

Clearly there is a lot of fear in these streets about the safety of pressure cookers, apparently back in the day they weren’t so savvy and the tops would blow off or whatever. I’ll say, all of the buttons and rules to using an Instant Pot can be a little intimidating and confusing but once you get the idea of how it works ie. make sure to add liquid you’ll never doubt it again.

Last week after forgetting to take something out for dinner I came up with an Instant Pot Pepper Steak recipe that was on the table in less than 30 minutes.

I literally tossed freshly chopped vegetables, a block of frozen organic beef strips, beef broth and a few spices into the Instant Pot. Fast forward 18 minutes and dinner was ready but tasted like it simmered for at least an hour.

The key with the Instant Pot is to make sure  you have adequate liquid in the bottom. I’m not sure what the liquid has to do with anything but don’t leave it out, I generally use a cup of liquid. Use chicken or beef broth in lieu of water for more flavor.

There is no excuse to stop at the drive thru on the way home during the week. Literally your dinner in the Instant Pot will be ready quicker than the time it takes to order and grab a pizza or anything else. Add this quick, easy, and delicious recipe to your weeknight rotation.

Instant Pot Beef Recipes – Pepper Steak

Serves: 4 servings
Ingredients
  • 2lbs beef strips
  • 1 cup beef broth
  • 2 cups coarsely chopped peppers and onion
  • 1 TBSP Vegetable oil
  • 1/4 cup ground ginger
  • 2 TBSPS brown sugar
  • 1/2 cup low sodium soy sauce
  • 2 TBSPS cold water
  • 2 TBSPS cornstarch
  • Kosher salt
Instructions
  1. Season beef strips to taste with kosher salt and pepper
  2. Utilizing the “Saute” feature on the Instant Pot, add vegetable oil and brown the beef strips, onion and peppers
  3. Once the strips have browned switch to manual setting and add in broth, soy sauce, ground ginger and brown sugar
  4. Stir well
  5. Lock the top on the pot, set the nozzle to seal and set for 15 minutes of high pressure
  6. Once the cook time has completed, carefully release the steam before removing the top
  7. Mix the cornstarch and water together until well blended
  8. Add the cornstarch and water mixture to the pot and stir to thicken the sauce
  9. Serve over rice, noodles, or vegetable zoodles

How to ReSeason Your Cast Iron Skillet

No pan alive has fried a better piece of chicken or baked a fluffier pan of cornbread than a cast iron skillet. I read a recent article that alluded to the fact that millennials have made these kitchen staples popular, you should’ve seen me with all of the eye rolls.

I remember being gifted a seasoned cast iron skillet as a gift when we moved into our first home. Not sure I understood the underlying message of such a thoughtful gift. Of course my initial thought was somebody must want us to have the best friend chicken, then as the age meter crept up I learned to treasure that gift for the actual history that lies behind those heavy black pots. They spell out memories of watching grandmothers and mothers over the years in the kitchen creating love through their food.

More than 13 years after receiving that skillet as a gift, I still treasure it so.Unfortunately due to poor care and my son not wiping it totally dry after washing  it started to rust. I reseasoned her a few weeks ago and she’s back to normal.

How to reseason a cast iron skillet

 

To reseason you need to pour a course salt into the pan and scour it with steel wool if your pot has rusted. I grabbed like a million steel wool scrubbers from the Dollar Tree. If you don’t have rust you can skip this step and just clean well with dish soap and water

Here’s a tip. Wear some gloves, my fingers got nicked a few times from rogue pieces of steel wool. Maybe that was because I used the Dollar Tree brand. Just be careful.

Once all of the rust is gone, rinse and dry with a paper towel. Rub a little vegetable oil on the inside and sides of the pan, then bake at 350 degrees upside down for an hour. Place something under the pan to catch the oil drippings. Once the hour has passed, turn the oven off and leave the pan in the oven to cool.

Seasoning a pan simply means putting an oil coating on it that will keep food from sticking. Most are already seasoned when you purchase them but in the event you notice food sticking just give it some seasoning love with the steps above.

To maintain my skillet, I wash with a drop of dish detergent and use the steel wool if there is stuck on food. There are some people that will say don’t use dish soap at all just use hot water and steel wool. I’ll leave that decision up to you.  I thoroughly dry the skillet and at times if the oven was used for dinner I will sit it in the oven for a few minutes to make sure it is fully dry before storing.

Bike Riding on the Atlanta Beltline

Let me just go on record and say if reincarnation is a thing, I would like to come back as a kid today on spring break. I’ve seen photos of children in Paris, New York, New Orleans, Las Vegas, the Bahamas, Cancun and a plethora of beaches to boot.

Apparently extravagant travel for spring break is now a thing and I’m all the way here for it. We laid low this spring break for a number of reasons, the main reason being our travel itinerary for the summer is turning out to be LIT. Saving coins won out over a spring break excursion this year, but we’ll make up for it with summer travels.

Monday afternoon I had Adrian load the children’s bikes into the car and off we went for a little Atlanta beltline adventure. Addison is still fairly new to riding her bike and I didn’t think it wise for me to ride so I walked while they rode. Upon getting on the trail she was very wobbly and distracted,  I’m glad I wasn’t trying to wield a bike and keep an eye on her. She did take an unfortunate tumble down a hill. I was right there to dust her off, encourage her and set her back on her way. In full disclosure we all had a good laugh about her tumble at lunch.

She found her groove about a mile in and she effortlessly peddled along side her brother as we enjoyed the lovely afternoon. We stopped along the way to take photos with a tiny door, sculptures and graffiti decorated underpasses, all popular landmarks along the Atlanta beltline. We trekked the full 2 miles into Midtown before stopping for lunch. Once lunch was over, complete with popsicles we borrowed the bathroom at Trader Joe’s and got back on the trail.

Please note those 2 miles into Midtown would require another 2 mile trek back to the car. At this point she was a pro and confidently found herself weaving in and out of pedestrian traffic while my legs struggled to keep up. They rode together out of my sight at times, stopping to wait for me to catch up. I shall  not leave out the fact that our return trip was on a slight incline and when I asked if their legs were at least sore after 4 miles of  bike riding they said no. Meanwhile your girl was sore for a few days. It’s okay, I needed that jumpstart to salvage some sort of a summer body.

Dollar Tree Gallery Wall Makeover

As much as I love rolling back my sleeves and putting a little elbow grease into projects in our home, I’ve found I can’t reasonably be held to a time frame in most cases. My genius needs time to breathe, and be indecisive and mull over ideas and Pinterest pins all while taking bitty steps here and there to develop my masterpieces. I mean Rome wasn’t built in a day or a weekend and neither are most of my projects.

A few weeks ago I revealed the very beginning of our hallway makeover in this post. I’ve been diligently working to get it completed and joined a few bloggers in a fun “Spring into Action Bloghop” where we vowed to complete an unfinished area in our home. If you are visiting from Nicole’s blog, She Does a Bunch thanks for stopping by! Let’s just say I didn’t quite “finish” my area but it has come quite a ways from this

A major part of the hold up is I decided to use Dollar Tree frames and let’s just say I can’t seem to find more in the larger sizes I need to properly balance everything out. I’m still searching Dollar Tree stores for 5 x 7 and 8X10 frames. Holler at your girl if you find some in your neck of the woods, I’ll happily send for gold frames.

….and before you suggest looking online, I did and conveniently they aren’t carrying this style.

I’ve managed to get quite a few up and print out a few photos. I have so many photos, and finding the perfect ones to display has been a little harder than I imagined….see indecisive reference above.

I’m still searching for the perfect runner. The doors still need to be painted, the light fixture replaced and we will be replacing all of the doorknobs and painting the ceiling. These things will come together in the following weeks. Please don’t ask me for a definitive date for this to get completed because I’ve decided to move into my office and start making that place over.
