A few weeks ago the Mr. and I stepped out for a much needed date night courtesy of Great Date Deals. Great Date Deals is an awesome website that does the hard work for you when it comes to selecting activities that you can do as a date. Great Date Deals offers deals for a number of major cities outside of Atlanta so make sure to check and see if yours is listed. I won’t lie, a part of the reason why we don’t get out as much as we should is because by the time we go around and around about what to do and where to eat while keeping our budget in mind we just end up staying at the house…true story.

The website listings are powered through Groupon so when you click to purchase the deal you are taken to the Groupon interface. Basically like I said they have done the hard part for you, so now there is no excuse for you to not hit the town with your honey.

For our date we headed out to The Cup – A Gourmet Cupcake Cafe located here in Atlanta. The location holds couples events that consist of lite fare and drinks, couple inspired games and cupcake decorating. Yes, I said cupcake decorating where you indeed get to eat lots of cupcakes.

Life Me Sanity

Lemonade?

So when life throws you lemons, the general consensus is you should be catching these small round objects whilst ducking to avoid getting hit from others that are undoubtedly being hurled at you. In the midst of bobbing, and weaving please add in squeezing, and the pouring in of sugar and water. Don’t forget to carefully stir all of these ingredients together in a nice southern inspired glass pitcher fit for a wrap around porch in the heat of summer.

On a good day I’m all about wetting your whistle with the sweet tartness that makes all well on a hot summer day. However, on today I feel like emptying all of the lemonade that  I’ve made into a super soaker and having target practice.

I. AM. TIRED.

See the thing with faith is those days come when you truly want to throw in the towel and admit defeat. Today is that day. The past few months have been a true roller coaster ride and I’m sure we all know when we’ve hit that rock bottom, that throw your hands in the air moment and I’m not talking about waving them around like you just don’t care in the party sense..but very much so in the literal.

These past few weeks have proven to be a challenge in the worse kind of way. This house situation has consumed me for the past year and the place where we are now offers up a whole ‘nother level of risk and reward. I promise to share more later in the week but today I just cried and needed to come here to my virtual couch to sit and have a chat.

In return for being such gracious listeners, can I offer you a glass of lemonade, I sure have a lot of it to go around. I’m pretty sure at this point putting it in a water gun and going to town will be the equivalent of pumping 6 oz of breastmilk and knocking the bottle over. I know about this.

I would rather give you some refreshment, read encouragement. If I’m still pressing you should to.

By the way, I’m offering you a glass of  good, wholesome southern lemonade…cause I know nothing about the Mike’s Hard variety. Nothing.

Granola From Scratch

I was at it again. I made granola from scratch.

It was good, easy and best of all it was cheap!!

I used this recipe I found on allrecipes and I did few tweaks

Started off with organic oatmeal, sliced almonds, and bran. Since I didn’t have actual bran flakes I just used Raisin Bran and plucked the raisins out…What?!!

I poured I mean Addison poured all the dry ingredients into a bowl. Who doesn’t love a little helper

Then I took these products in which I substituted olive oil for vegetable oil

…and brought them to a rolling boil

and poured the mixture over the dry ingredients and mixed it all together

I baked the mixture at 350 for about 20 minutes, tossing lightly to make sure the bottoms didn’t burn. Once I pulled it out of the oven I added in some raisins and dried cranberries. I later molded some into bars and stored the rest in an air tight container.

Over the course of the week I just added a few spoonfuls to some greek yogurt for breakfast and gave them to the kiddies for snack. Turned out really good with just the right amount of sweetness. Will definitely be making this again.

Time taken from start to finish was about an hour.
