I’m a track mom. He voted against baseball this year. The selfish mom in me wanted me to make him play so I didn’t have to make new team mom friends but when he was pretty adamant about giving track a go, I dragged my feet down to the county rec office and signed him up.
Y’all.
Nobody told me that signing up for rec track would be like scribbling my name on the dotted line for a travel sport. The majority of our meets are at least an hour away. Note, I said at least which would imply some are a little farther.
Too late, fees are paid so we are all in. Our first meet was this weekend. So typical that we have been having Summer in March until this past weekend when Jack Frost came through like, don’t call it a come back.
Arrived around 8a. He did not run until 1p. All of that time, sitting in the cold.
Nonetheless, we joked and laughed, and ate french fries and drank hot chocolate. I’m seeing this track thing is a lifestyle.
He has already asked to run in the Summer league. Please send tents and snacks and sunscreen.

Ever stumbled onto a new hobby? I have and of all things it is editing video. I love it so much I am contemplating taking a class and really getting into it.
In the meantime those of you that have enjoyed our weekend family vlogs in the past will be seeing more of them simply because editing video is my new creative outlet.
This weekend my best friend got married. It’s been a whirlwind few weeks celebrating her including our epic trip to Cherokee, NC.
The wedding was absolutely beautiful, for obvs reason I don’t have photos of the actual ceremony, but here are a few that we snapped post wedding.
Our entire weekend has been condensed to 10 minutes in this week’s vlog to include pre and post wedding shenanigans! Let me know what you think of my new take on vlogging.
One pot meals are everything when it comes to getting dinner served quickly during the week. Monday – Thursday is the busiest part of our week so easy dinners are a must. They are a great way for me to prepare dinner ahead of time so I’ve been experimenting a bit with a few and this chicken and sausage dirty rice recipe will be added to the rotation indefinitely. It’s a great alternative to the famous beef and broccoli recipe we all love.
One Pot Chicken and Sausage Dirty Rice
I adapted this recipe from The Chunky Chef and made it a little milder for the kids.
One Pot Meal | Chicken and Turkey Sausage Dirty Rice

Ingredients
C H I C K E N M A R I N A D E
1 tsp Salt
1 tsp Garlic Powder
1 1/2 tsp Paprika
1/2 tsp Pepper
1/2 tsp Dried Onion
1/2 tsp Oregano
1 TBSP Olive oil
R E M A I N I N G I N G R E D I E N T S
2 Tbsp Olive oil
1 Green Bell Pepper
1 Package Turkey Sausage Links
4 Chicken Thighs
1 Diced Onion
1 cup DRY long-grain rice
2 1/4 cup chicken stock or broth
Salt and Pepper to your personal taste
Instructions
C H I C K E N M A R I N A D E D I R E C T I O N S
Mix all of the ingredients together to make a paste. Rub your chicken thighs with the paste
C O O K I N G D I R E C T I O N S
Brown cut up sausage in a bit of olive oil. Once cooked remove from pot
Add more olive oil to pan if necessary, sear chicken thighs on each side. Remove when browned
Saute onions and bell pepper, stirring up brown bits from chicken and sausage
Once vegetables have browned add in rice and give a good stir
Add in chicken broth and bring to a slow simmer
Put chicken thighs back into pan tucking them into the rice and top with sausage
Place lid on pot and place in oven at 350 degrees for 40 minutes or until all liquid has cooked into the rice

My bestie is getting married. I could go into a blog series about all of the levels of happiness I have for her and her new married life but I’m pretty sure if you aren’t part of the clique it just won’t have the same effect. Instead I’ll just share with you the epic amount of fun we had during our small little girls trip to Cherokee, North Carolina.
Before we got too far out of the city we stopped at Publix to gather our vittles for the weekend.
Let’s get into how we got all the way within stone’s reach of the cabin before we got lost and let’s just say there was a washed out road and barking dogs and a person in a house coat yelling , “Can I help you,” and all of the things women should be afraid on the top of a mountain.
Y’ALL.
After we fished ourselves out of that mess and back to the paved road, the weekend fun officially began. The cabin was pretty dope in a mountainy, country kind of way.
The animal decor did give me the creeps a little bit.

The wrap around porches gave tons of serenity. We couldn’t have chosen a better weekend for sitting out. The temps were in the high 60’s.
Busy lives we all lead so no real plans were set, we just wanted to eat, have a few drinks and a ton of laughs and that’s just what we did.
So you already know the turn “in” was earlier than in our younger days. Sleep soon came and the morning welcomed a community cooked breakfast and mimosas and laughs and talks about retirement plans, and taxes and kids and husbands and you know grown woman ish.
We got ourselves together and headed down to the Harrah’s Casino for a little gambling. This was my very first time playing slots. I’ve been to Vegas but never played. Pretty sure everyone was annoyed with all of the questions I was asking. After I finally wrapped my head around how everything worked, armed with my lone $20 I set in…..to lose $18.
My misfortune was all by itself. Everyone else came up on a few hundred dollars. The casino was very nice minus the smell of smoke, I walked out with the worst headache and a head full of hair that reeked of the home of a chain smoker. Was glad to get out of there with my $2 tucked away for safe keeping.
Post Harrah’s we scurried back to the cabin, cause again…..mountain road, dark, no street lights…….
The grill and firepit was lit, and we settled in for another fun evening of girl talk and reminiscing on our younger years.
I don’t do hot tubs, so I was on boogey man watch.
