Few things feed a hungry stomach like a Chick-Fil-A sandwich so when I saw a dupe recipe on Pinterest I just had to try it.

The most shocking portion of this recipe is you have to marinate the chicken in pickle juice. I suppose there is a first time for everything but I had never heard of such.

I mean while I’m discussing odd ingredients this also called for confectioner’s sugar, and special blend of spices.

This was certainly not your “I’m in a hurry” recipe. You have to flatten the chicken breast with a mallet and let it marinate. So plan accordingly.

Let me say this, I made this twice and the time I followed the directions and used peanut oil the taste was almost spot on to Chick-Fil-A. Neither was exact,  both ways were very good but the peanut oil did make a huge difference.

The children loved it. We didn’t even miss out on the sauce, cause you know the drawer in the kitchen where you keep all of the extra sauces you don’t use…

Serves: 4 sandwiches
Ingredients
  • 2 Boneless Skinless Chicken Breast
  • 1/2 cup Pickle Juice
  • 2 Eggs
  • 1/4 cup Milk
  • 1 cup Flour
  • 2 tbsp Powdered Sugar
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Celery Salt
  • 1/2 tsp Basil
  • 1 cup Peanut Oil for frying
  • 4 Buns (buttered and toasted)
  • Pickle Slices!
Instructions
  1. Put chicken in zippered bag and pound gently with the flat side of a mallet until about 1/2″ thick.
  2. Cut each breast into 2 equal pieces.
  3. Marinate chicken in the pickle juice for about an hour.
  4. Beat together egg and milk in a bowl.
  5. Mix together the flour, sugar, and spices in another bowl.
  6. Heat the oil in a skillet to about 350.
  7. Dip each chicken piece into the egg covering both sides, then coat in flour on each side.
  8. Fry each chicken piece for 2 minutes on each side, or until golden and cooked through.
  9. Place on paper towels to absorb any excess oil.
  10. Then serve on toasted buns with pickle slices.

This weekend I so desperately wanted to rest, it didn’t work out that way.

Friday we started off with a trip to Six Flags for Holiday in the Park.

Saturday, I had a professional organizer come in to help us get the master bedroom closet together. My intentions were good but my execution in getting it together was poor. Our master closet is so small and now that we are making preparations for the master bathroom renovation completion the closet needs to get done first so we can lay the floor before the new closet is installed.

I don’t think I understood the importance of a professional organizer but OMG! She was amazing. As much as I can be orderly, I still get overwhelmed at large projects so I will be working with her throughout 2016 for a few of the larger storage projects I need to do.

Saturday evening, I ran a few errands but the stores were so crowded I just wanted to get back home. I made some chili and spent the evening watching The Wiz with the babies.

Sunday, I woke early to catch that good morning light and took some photos of the most adorable family. When I saw the Hawk was out. It was so cold we had to cut the session a little short. Later that afternoon, I attended a sorority committee meeting and cooked dinner before retreating to my bed and stuffing my face with brownies.

I am really planning to lay low next week and get ready to host Thanksgiving. I still have shopping to do but I think I will send my husband, and I guess I need to remind him to take the turkeys out of the freezer tonight otherwise….

holiday prep ramblings

Seems like I was just hunting down the perfect pair of mums for my front porch, and now it’s time to remove my pumpkins and switch my porch out for  Christmas.

I’m not ready. I haven’t put any thought into our outdoor Christmas decor but the kids reminded me on this lazy Saturday that we have to test the Christmas lights and asked me a million times  on what day are we going to get our Christmas tree.

I mean, I guess we have to find the stand first, but at least the elves reappeared *wipes brow* Not only are the elves expensive but finding a little brown one this late in the game would’ve been a problem for sure so yay for small victories.

Every year I say we are going to cut down our own tree and every year somebody talks me into going to the neighborhood Kroger and having one tied to the top of the car for us. Not this year. We live down the street from the Christmas tree farm. I pass it nearly once a week, and have watched those babies grow for the past year. One of them has my name on it. I need to call and see if we need to bring our own axe.

….and somehow cutting down our own Christmas tree brings me flashbacks of the scene from National Lampoon’s Christmas Vacation. That is my favorite Christmas movie of all time.

Not a clue what to get my daughter for Christmas. When I ask there is a long rambling verbal list of things and she follows me from room to room with it. Only thing I have been able to get a clear answer on every time is a Bitty Baby.

Thanksgiving menu is done, dishes assigned and plan of action in place. Went to the store today to pick up my items and walked out. I’ll have to go late at night, I remember why I turn into a hermit during the holidays. Too many people.

I tell you the things we do for our children. I look forward to Fridays as my day to relax before the hustle of the weekend starts. I traded in rest for a fun night in the park at Six Flags over Georgia with my babies. We went for a preview of  “Holiday in the Park.”  I’ll do a more in depth review later in the week, but since you know…..blogging everyday, I’m sharing just a few shots of our evening. We had a ball!
