summer lunch | Freschetta and Watermelon Cucumber Feta Salad

Seeing as how I started off the first few weeks of school with a variety of lunch options and later defaulted to the good ole handy sandwich, I kind of believe these babies are sandwiched out. With them being home with me during the day for the next few weeks, I’m going to devote some days to actually cooking these babies something warm.

Note I said “some days”

Beef and broccoli and pizza are my clutch go to menu items for those times I don’t feel like cooking or need something quick and easy. If you follow me on Snapchat then you know one of my children is over beef and broccoli so pizza it is. I have a deep freezer and when pizzas go on sale I like to purchase them in bulk and stock up. Publix is currently having a great promotion offering 2 Freschetta Pizzas for $10 that is valid from 5/19- 6/8.

A part of our outing yesterday included going to Publix to pick up a few items and some of those items included pizza.

We grabbed a few boxes of Freschetta Brick Oven Crust. Freschetta is focused on the quality ingredients they use in their pizzas, and for their Artisan Crust variety it is all about the 3 whole grains that go into the delicious crust. The Artisan crust option is new to Publix stores so be on the look out for it.

Once we got home I threw together a quick watermelon, cucumber and feta salad to go with their pizza.

This salad is super easy to make you need:

Cucumber Watermelon Salad
Ingredients
  • Watermelon chunks
  • Feta cheese (cubed or crumbled)
  • Cucumbers
  • Balsamic Vinegar
Instructions
  1. Add watermelon, cucumber and feta to a bowl
  2. Add balsamic vinegar to taste
  3. Toss and enjoy!

Watermelon Cucumber Feta Salad

Here’s the thing, I made this watermelon cucumber feta salad because this sweet tooth has to go!

So let’s talk about the fact that I’m giving up white sugar….or at least moving toward that goal. I am in my second week and I promise my sweet tooth has been taunting me like a relentless bully. The struggles eliminating the hidden sugars are nothing in comparison to those Oreos in there that just keep calling my name.

See I’m not stripping the whole family….just yet. I’m trying to fine tune this new lifestyle before I thrust them into it. So the struggle has been how to curb and satisfy my sweet tooth.

I love salty stuff as well, stripped myself of that about a year ago so I thought what better than a watermelon, cucumber and feta salad. Sweet, salty and refreshing.

This salad has just the right amount of all natural sweetness and saltiness.

Super easy to make with just cubed watermelon and feta cheese ( or you could use crumbles) and cucumber. I’m not a huge fan of cucumber so I made sure to slice thinly and drizzled balsamic vinaigrette over the top.

Ingredients
  • Half of a ripe watermelon (cubed or balled)
  • 3 cups cubed feta cheese
  • Thin cucumber slices
  • Balsamic Vinegar
Instructions
  1. Combine watermelon, feta and cucumbers into large ball
  2. Drizzle balsamic vinegar over mixture and toss
  3. For extra garnish add mint or onion

And because I love all things watermelon, this watermelon guacamole recipe will be in heavy rotation all season long. Some chips, a cold drink and this guac is all I need for some evening porch sitting.

Watermelon Guacamole

Thanks to the enormous amount of pollen that currently coats the floor of my outdoor porch, it is not officially open for business. During this time it is undergoing a transition in preparation for its official opening activities on May 5. I’m keeping the party fare light, and seeing as how Cinco de Mayo wouldn’t be right without some guac, I’m adding a little spin with my watermelon guacamole recipe. Perfect with tortilla chips or placed upon watermelon wedges, this is the perfect guac recipe for any Summer shindig.

Cinco de Mayo happens on a Friday this year. This. Is. Not. A. Drill!

Watermelon Guacomole

This super easy recipe includes avocados (duh), watermelon, purple onion, cilantro, lime, kosher salt, and feta cheese.

Ingredients:

3 Large Avocados

1-2 cups cubed watermelon

⅓  cup chopped fresh cilantro

¼ cup chopped red onion

2 tablespoons fresh lime juice

⅓ cup crumbled feta cheese

Kosher Salt

Pepper

Instructions:

Mash avocados well, adding in fresh lime juice to wet mixture as you go. Add more if necessary. Once avocados are mashed well, add in remaining ingredients and stir. Add salt and pepper to taste.

Cinco de Mayo festivities on a Friday surely means the party shall last all weekend long! A Cinco de Mayo party isn’t a Cinco de Mayo party without some drinks and cocktails to kick off a little Summer fun and inspire you to let loose and enjoy the weather and fellowship that the season brings.

Cinco de Mayo and porch season is going to be lit this year, I can’t wait until the porch officially opens for the season. Nothing brings me more joy when the weather gets warm than fellowshipping over good food, good music and good drinks. This watermelon guacamole, chips and drinks will be in heavy rotation throughout the season! And because watermelon is my jam, my famous watermelon cucumber salad will be on the scene too.

2015 in review | most shared recipes

I did lots of cooking this year. When the spirit or the thought hit me, I photographed my steps and final plating to share with you. Some of these recipes really took off and I have since gotten tweets and messages about how many of you tried these and enjoyed them.

Next year I promise to bring more recipes to the blog. If you understood the work that goes into the awesome art of multitasking that is cooking whilst snapping photos with just the right light and angles you will know that this is not an easy task so I appreciate when these posts are shared or I get a message saying how much you enjoyed said dish.
